INGREDIENTS

1 small red bell pepper, diced
1 To Taste fine salt
1 To Taste Cayenne pepper
1 To Taste freshly ground black pepper
6 tablespoons Vegetable Oil
500 grams Dory fillet
1/8 cup Water
1/4 packet NESTLÉ All Purpose Cream 125ml
10 pieces picked basil leaves, rinsed and drained well

STEPS

Step 1 Slice the bell pepper into 4 and remove seeds. Season with salt, pepper and 2 tbsp of olive oil.
Step 2 Wrap the bell pepper in aluminum wrap and roast in a 200 degree C oven for 30 minutes.
Step 3 Sear the fish fillets in the oil, about 2 minutes on each side. Finish in the oven if necessary.
Step 4 Blend together roasted pepper, water, NESTLÉ® All Purpose Cream and basil leaves. Season with salt and pepper.
Step 5 Serve the fish with the sauce at the bottom.
